The traditional
livestock husbandry in the Dehesas of Andalusia and Extremadura,
for time immemorial, has been determined by the presence of
the Iberian Pig. Breeding, husbandry and fattening, closely
intermingled with the natural surrounding, has always been guided
by the desire to conserve these conditions with all their economical
and cultural connotations.
Around the Iberian Pig and the Dehesa and during many centuries
there has been developed a socio-cultural system including all
aspects of quotidian life: gastronomy and typical dishes, popular
holidays, music and craftsmanship. The ecosystem Dehesa stands
for the harmonic coexistence of - on the one hand - the conservation
of a unique natural heritage and - on the other hand - the economic
exploitation of natural resources by man.
Thanks to the initiative of the three firms - Fundación
Monte Mediterráneo, Consorcio de Jabugo and Derivados
del Cerdo Ibérico - this "naturally economic concept"
could open up to new challenges in the organic agriculture and
food production.The result of this effort is the world novelty
in the food market: products of the Iberian Pig in certified
organic quality.
